Gluten Free Brownies

You don't have to miss out on eating brownies if you have a gluten allergy or intolerance.

Try these melt in the mouth slices of indulgence.

Ingredients

Brownies

  • 25g of best quality 75% gluten free dark chocolate
  • 50g butter
  • 100g caster sugar
  • lightly whisked egg
  • ½ tsp pure vanilla extract
  • 35g ground almonds
  • ½ gluten free baking powder
  • pinch of salt
  • 55g chopped walnuts

Raspberry Coulis

  • 85g/3oz raspberries
  • 2 tbsp water
  • 1 tbsp icing sugar
  • 85g winter berries

Procedure

  • Line a 20cm tin with silicone paper.
  • Preheat the oven to gas mark 4.
  • Melt the chocolate in a heatproof bowl suspended over a pan of simmering water.
  • Cream the sugar and butter until pale, soft and light.
  • Then beat in the lightly beaten egg the vanilla extract and melted chocolate.
  • Lastly stir in ground almonds, gluten free baking powder, salt and chopped nuts.
  • Spread the mixture in the tin and bake for about 30-35mins.
  • For the raspberry coulis, place all the ingredients in the bowl of a food processor and process until smooth.
  • Sieve to remove the raspberry pips.
