Tofu, Chocolate & Hazelnut Mousse

Preparation time 10 minutes.
Refrigeration time of 1 hour prior to serving.
Serves 4-6

Ingredients

  • 1 block Cauldron Original Tofu
  • Juice & zest of 1 large orange
  • 30g caster sugar
  • 300mls fresh cream, lightly whipped
  • 200g milk chocolate (plus extra to decorate)
  • 75g hazelnuts, roughly chopped (plus extra to decorate)
  • Italian almond biscotti biscuits/Amaretti to serve on side
  • Mint leaves to decorate

Procedure

  • Drain the tofu, removing as much of the liquid as possible.
  • Liquidise into a smooth paste, add the juice and zest of the orange along with the caster sugar, and set aside.
  • Lightly whip the cream then add it to the tofu paste.
  • Melt the chocolate in a bowl over a pan of boiling water then fold gently into the cream and tofu mixture.
  • Take some of the hazelnuts and sprinkle into the bottom of a bowl place a spoon full of mousse on top then repeat, keeping a few hazelnuts for garnishing.
  • Refrigerate for 1 hour.
