Tofu, Chocolate & Hazelnut Mousse

Preparation time 10 minutes.
Refrigeration time of 1 hour prior to serving.
Serves 4-6
Ingredients
- 1 block Cauldron Original Tofu
- Juice & zest of 1 large orange
- 30g caster sugar
- 300mls fresh cream, lightly whipped
- 200g milk chocolate (plus extra to decorate)
- 75g hazelnuts, roughly chopped (plus extra to decorate)
- Italian almond biscotti biscuits/Amaretti to serve on side
- Mint leaves to decorate
Procedure
- Drain the tofu, removing as much of the liquid as possible.
- Liquidise into a smooth paste, add the juice and zest of the orange along with the caster sugar, and set aside.
- Lightly whip the cream then add it to the tofu paste.
- Melt the chocolate in a bowl over a pan of boiling water then fold gently into the cream and tofu mixture.
- Take some of the hazelnuts and sprinkle into the bottom of a bowl place a spoon full of mousse on top then repeat, keeping a few hazelnuts for garnishing.
- Refrigerate for 1 hour.
