Honey Mustard Chicken
Making meals from scratch and cooking fresh need not be a headache. With a little forward planning, and experimenting with new flavours, you can have a home-cooked family meal together most evening.
Honey mustard chicken, all in one pot. Delicious family meals made for sharing.
Ingredients
- 400 - 600g potatoes - peeled and sliced
- 600g chicken breast - sliced
- 2 sweet onions - chopped
- Few sprigs Rosemary
- Salt & pepper
- 2 tbsp Dijon mustard
- 3 tbsp wholegrain mustard
- Juice of a large lemon
- 2-3 tbsp honey
- 3 tbsp olive oil
- 2 cloves garlic - finely chopped
Method
- Pre heat the oven to Gas Mark 6
- In an oven proof skillet, cook the onions in a tablespoon of olive oil until softened and browning
- Remove from heat and layer on the potato slices to evenly cover the pan
- Drizzle with 1 tablespoon of olive oil and season with salt and pepper
- Cover with foil and cook for 15 - 20 minutes in the oven until softened
- Meanwhile, mix the mustards, lemon juice, chopped garlic, honey with remaining tbsp of olive oil, salt and pepper to taste
- Arrange chicken strips on top of softened potatoes and pour over the sauce, covering evenly
- Garnish with Rosemary sprigs
- Cover and bake for 20 minutes before removing the foil and browning under a high grill heat before serving
The honey mustard sauce can be made sweeter by adding more honey, or sharper with more lemon - adjust to your personal taste.
