Garlic Roast Lamb
Fancy something different this Easter Sunday.
With garlic just coming into season, what better than a nice rack of garlic roast ribs to celebrate this year.
Ingredients
- Prime rib roast (approx 5lbs)
- 5 cloves garlic, minced
- 1 tablespoons olive oil
- 1 teaspoons salt
- 1 teaspoons ground black pepper
- 1 teaspoons dried thyme
Procedure
- Preheat the oven to gas mark 9 (240c). CAUTION - VERY HOT
- Place the roast in a roasting pan - fatty side up.
- Press the garlic and mix together with the olive oil, salt, pepper and thyme.
- Spread the mixture over the fatty layer of the roast, and let the roast marinate at room temperature for approx 45mins.
- Bake the roast for only 20 minutes in the preheated oven, then reduce the temperature to gas mark 3 (165c), and continue roasting for an additional 60 - 75 minutes.
- Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.
