Carrot and Clementine Salad
This salad would make an ideal starter or lighter lunch.
With fresh flavours using seasonal clementines and walnuts together with year-round carrots, you can create this salad in an instant.
Serves 4
Ingredients
- 8 carrots, grated
 - 4 clementines, peeled and diced
 - 100g/8oz walnuts, chopped
 - 30ml/2tbsp chopped chervil
 - 15ml/1tbsp lemon juice
 - 15ml/1tbsp groundnut oil
 - salt and pepper
 
Procedure
- Mix the carrots, clementines, walnuts and chervil together.
 - Whisk together the lomon juice and oil.
 - Season to taste with the salt and pepper
 - Pour the mixture over the prepared salad
 - Serve with fresh warm bread or Melba toast
