Valentine's Mousse

Ideal for chocolate lovers - a delicious dessert for Valentine's Day (14th February 2011). This creamy, rich chocolate mousse recipe is simple to make and can be prepared in advance. Leave it in the fridge until you are ready to enjoy!

Ingredients

  • 320g of dark chocolate (the stronger the better!)
  • White chocolate to decorate
  • 30g of unsalted butter
  • ½ dozen (6) eggs
  • A pinch a salt

Procedure

  • Separate the eggs and place the whites into a large bowl.
  • Break the chocolate into small pieces and place in a glass bowl.
  • In a saucepan heat approximately one centimetre of water and leave on simmer.
  • Place your glass bowl of chocolate over the saucepan, add the butter and allow to melt.
  • Stir occasionally.
  • In the meantime, add a pinch of salt to the egg whites and whisk to the soft peak (floppy) stage.
  • Break and mix together the egg yolks and when the chocolate and butter have melted and slightly cooled stir in the yolks.
  • Cut and fold in the whites a little at a time until seamlessly combined.
  • Pour into ramekins and refrigerate for a couple of hours to set.
  • When ready to serve decorate with grated white chocolate.
