Super Quick Store Cupboard Cottage Pie
We love Cottage Pie but get tired of the long time it takes to put together sometimes or the lack of ingredients we have available, so to make it easy we are sharing our super quick, ingredients in the cupboard, recipe.
Great for the days when time is short, ingredients are missing and we use whatever comes to hand to suit our tastes.
These were made before work in 30 minutes, ready to heat and eat when we get home tonight. Great for the fussy eaters who pick out all the vegetables. If you have more time you can blend veg in to 'hide' in the sauce.
Ingredients
- 1lb of lean beef mince
- 3.5lbs of potatoes
- large onion
- brown sauce
- tin of baked beans
- salt & pepper
- Worcester sauce
- Beef stock cube
- 200ml cold water
- Tomato puree
Method
- Peel and roughly cube the potatoes and boil in water until soft.
- In the meantime, fry onion until softened on a high heat before adding mince. Cook until browned, then lower heat to a simmer.
- Add stock cube (crumbled in) pepper, salt, dash of Worcester sauce, blob of brown sauce - then stir in water.
- Pop in the beans and a good squirt of tomato puree.
- Leave to simmer for 15 minutes on a low heat while you mash the potatoes.
- Split the meat mixture between two oven-proof dishes and top with the mashed potato.
- Super quick Cottage Pie - pop in the oven for 30 minutes to heat through completely and brown off the top.
- Each pie will feed four so either invite more people round for dinner or pop the spare in the freezer for next week (simply get it out in the morning to defrost for the evening meal).
Our dishes measure 17 x 22 x 6 cm in size and hold enough for four people to have a balanced portion size. On a 'hungry day' we split it between 2-3 people.
