Soft Boiled Eggs with a Parma Parmigiano Twist - Meals in Minutes

Try this twist on a classic boiled egg and soldiers. A great way to get the kids to try new things that are already a little familiar, and a wonderful light lunch or supper for adults alike.

You can upscale this recipe with a couple of duck eggs or drop in regular free range chicken's eggs if that's what you have in the kitchen. Parmigiano Reggiano (parmesan) cheese offers a very low lactose count and is recommended for this recipe, but you can use regular cheese as an alternative. The same for the ham.

Whilst we adore Parma Ham and Parmigiano Reggiano cheese, this recipe will work just as well with your regular ham and cheese that you have available.

Soft-boiled Eggs with Asparagus, Parma Ham and Cheese Dippers

Serves 2

Ingredients

  • 2 eggs
  • 6 asparagus spears
  • 6 slices Parma Ham
  • 30g shaved Parmigiano Reggiano
  • Cracked black pepper

Procedure

  1. Carefully lower the eggs into a pan of boiling water and boil for 6 minutes.
  2. Remove from the water and stand in eggcups.
  3. Meanwhile, blanche the asparagus in boiling water for 3-4 minutes until tender.
  4. Plunge into ice cold water to cool.
  5. Lay a slice of Parma Ham on a board and top with an asparagus spear and a little Parmigiano Reggiano.
  6. Wrap the Parma Ham around the asparagus and Parmigiano Reggiano.
  7. Slice the tops off the eggs and serve with the asparagus bundles for dipping.
