Roast Asparagus with Houmous and Parmesan
A lovely starter that you can also try with parma ham or salami.
Ingredients
- 1 bunch of asparagus
- Olive oil
- Quarter pot of broad bean & asparagus houmous
- 1 lemon
- Basil leaves
- Parmesan
Procedure
- Place the asparagus in a roasting dish and drizzle with olive oil.
- Add some seasoning (salt & pepper).
- Roast at 200C for 10-15 minutes.
- Mix the houmous with a splash of water to enable it to drizzle over the asparagus.
- Squeeze the lemon over the houmous.
- Scatter with the parmesan, basil leaves and plenty of black pepper.
- Serve with fresh, crusty bread.
