Roast Asparagus with Houmous and Parmesan

A lovely starter that you can also try with parma ham or salami.

Ingredients

  • 1 bunch of asparagus
  • Olive oil
  • Quarter pot of broad bean & asparagus houmous
  • 1 lemon
  • Basil leaves
  • Parmesan

Procedure

  • Place the asparagus in a roasting dish and drizzle with olive oil.
  • Add some seasoning (salt & pepper).
  • Roast at 200C for 10-15 minutes.
  • Mix the houmous with a splash of water to enable it to drizzle over the asparagus.
  • Squeeze the lemon over the houmous.
  • Scatter with the parmesan, basil leaves and plenty of black pepper.
  • Serve with fresh, crusty bread.
