Marinated Mushrooms With Prawns
A simple no-cooking recipe for an easy snack; or light evening meal to enjoy after a long day, while watching the sun begin to set.
Ingredients
- 8oz button mushrooms
- 4oz cooked and peeled prawns
- 2 tblsp lemon juice or wine vinegar
- 4 tblsp olive oil
- Freshly ground black pepper
- Roughly torn, fresh spinach leaves
- Finely chopped parsley (optional)
Procedure
- Slice the mushrooms thinly.
- Mix with the cooked prawns and spinach in a shallow dish.
- Combine the lemon juice (or wine vinegar), olive oil and pepper to make a dressing.
- Pour dressing over the mushrooms and prawn mixture.
- Stir well and leave to marinate for at least one hour.
- Serve in individual dishes - sprinkled with chopped parsley.
- Delicious with hot garlic bread.
