Easy Cheesy Rolls

We couldn't resist these wonderful cheesy rolls and wanted to share this recipe with our readers. Fabulous party snacks - or a lunch box alternative - just store them in an air tight container and they are ready for when you want to snack away!

This makes about 15-20 rolls, depending on how you cut. You may need more cheese or you could try adding some finely chopped ham for a bit of extra flavour.

Ingredients

Dough

  • 500g of plain flour
  • 2 tbsp baking powder
  • 1 tsp salt
  • 3 tbsp butter
  • 3 tbsp shortening (lard, or other fat of choice)
  • 500 ml cold water or milk

Filling

  • 500 g shredded cheddar cheese
  • 1 tbsp mustard
  • 2-tbsp minced onions
  • 2-3 pimento peppers chopped
  • 1 tsp freshly ground black pepper

Procedure

  • Mix together all of the dry ingredients.
  • Add the butter and the chopped shortening and rub into flour until it looks like breadcrumbs.
  • Add the water (or milk), a small amount at a time, mixing in gradually with the flour until the dough comes together. (More or less than 500ml may be used - according to personal preference).
  • Separate dough into two portions.
  • Each piece should be rolled out to a rectangle about 1 cm thick.
  • Spread a thin layer of mustard across the dough, leaving about 2 cm free on one of the long edges.
  • Evenly sprinkle cheese, onions and black pepper, leaving the 2cm on the long edge clear.
  • From the edge opposite you clear edge, begin to roll. Try and keep it as air free as possible.
  • Pinch the dough as you roll it together. Once you have finished rolling make sure you tuck in both ends to make them flat.
  • Then stick down the clear edge and seal it together.
  • Slice the roll, each piece should be approximately 2 cm thick. Place on a greased baking sheet.
  • Repeat for 2nd piece of dough.
  • Bake in 375 degree oven for about 15-20 minutes, until golden-brown on the bottom.
