Applewood© Smoked Winter Salad.

Quick and easy recipe for a great tasting salad - with Applewood© Smoked Cheddar Cheese.

Serves 6-8 Prep time: 15mins Cooking time: None

Ingredients

For the salad:

  • 1 bulb fennel, trimmed and finely sliced
  • 2 carrots, peeled and grated
  • ½ peeled celeriac, peeled and grated
  • 200g (7oz) red cabbage, finely sliced
  • 2 red apples, cored and sliced
  • 6 radishes, trimmed and sliced
  • 150g (5oz) Applewood© Smoked Cheddar Cheese, grated
  • 1 tablespoon each of sunflower seeds and pumpkin seeds

For the dressing:

  • 2 teaspoons wholegrain mustard
  • 1 teaspoon runny honey
  • 2 tablespoons cider vinegar
  • 6 tablespoons olive oil
  • Handful of chopped, fresh mixed herbs; e.g. tarragon and parsley
  • Salt & freshly ground black pepper

Procedure

  • Place all the salad ingredients in a large bowl and mix together.
  • In a separate bowl mix the mustard and honey together, add the vinegar and slowly pour on the olive oil and mix well using a balloon whisk.
  • Add the herbs and season to taste.
  • Pour the dressing over the salad and serve.
