Applewood© Smoked Winter Salad.
Quick and easy recipe for a great tasting salad - with Applewood© Smoked Cheddar Cheese.

Ingredients
For the salad:
- 1 bulb fennel, trimmed and finely sliced
- 2 carrots, peeled and grated
- ½ peeled celeriac, peeled and grated
- 200g (7oz) red cabbage, finely sliced
- 2 red apples, cored and sliced
- 6 radishes, trimmed and sliced
- 150g (5oz) Applewood© Smoked Cheddar Cheese, grated
- 1 tablespoon each of sunflower seeds and pumpkin seeds
For the dressing:
- 2 teaspoons wholegrain mustard
- 1 teaspoon runny honey
- 2 tablespoons cider vinegar
- 6 tablespoons olive oil
- Handful of chopped, fresh mixed herbs; e.g. tarragon and parsley
- Salt & freshly ground black pepper
Procedure
- Place all the salad ingredients in a large bowl and mix together.
- In a separate bowl mix the mustard and honey together, add the vinegar and slowly pour on the olive oil and mix well using a balloon whisk.
- Add the herbs and season to taste.
- Pour the dressing over the salad and serve.
