Gluten-Free Baking at Home with a Little Help from Honeybuns

We picked up a copy of Emma's Honeybuns recipe book and decided to see how easy it was to create our own Heathcliff Brownies at home.

"Like the romantic hero of 'Wuthering heights', these brownies are dark and brooding. They're flavoured with orange and just sweet enough, with lots of body and bite. Delicious served lightly chilled and cut into thin slices, but equally good warmed through and served with clotted cream and/or ice cream, they are the ultimate in sinful puddings."

A mixture of butter, dark chocolate (lots of dark chocolate), coffee grounds, orange zest and almonds - to name a few - go into these deliciously indulgent brownie. An easy to follow recipe, we had no problem replicating the detailed step-by-step instructions.

It felt a bit odd to be making cakes without flour but the recipe uses ground almonds instead and it is not so much replacing the flour but using a different ingredient to achieve as good, if not a better, result.

With a cooking time of only 25-28 minutes you could have these prepared, cooked and ready to eat in about an hour.

The recipe made approximately 20 medium sized brownies that cost roughly £1 each as we had opted for a good quality eating chocolate. This increased the price dramatically but if you like regular cooking chocolate then you could probably half this cost.

The final result were exactly 'what it says on the tin' - or in this case, in the book. Decadent, delicious and great with ice-cream. We still have about 5 left in the tin after a week and they are as moist as the day they were baked.
