Many people will tell you that making curry is a labour intensive meal that is easier bought from the jar or local takeaway.

I have lost count of the times I have decided to make a curry, throwing various powders and spices in with a pan of fried chicken, only to discover what I thought would be a masterpiece in creation is in fact a heated, overworked or bland dish of sauce, with the wrong combinations, leaving me in no uncertain terms that curry from scratch is not as easy as it seems.

If you are looking for the middle ground, an authentic pre-made base sauce that you can add your own balance of spice to, then we can definitely recommend Harjinder's Kitchen. Out of the three we have to admit this lovely lady had us bowled over - on presentation, on taste and on likeability! And the Hairy Bikers also agreed as they included a good collection of Harjinder's recipes in their 'Mum Knows Best' family cookbook.
We met Harjinder at the London Spirit of Summer Fair and took home one of her Punjabi Tarka Masala kits to put to the test. Serving up to eight people from one pack, with 12 recipe options and 5 spices included, we decided to split the sauce and make two curry options for four people.
Harjinder's base sauce does not include additional water but is made up from ingredients such as tomatoes, onion, coriander, and ginger - which create the perfect base to add the spices to. Inside the pack you will find recipe cards which tell in great detail what is needed and how many it will serve.
We chose to make the Mixed Vegetable and the Rustic Chicken curries. Simply put the sauce in the pan, add the meat (or vegetables) and then the spices - which you can add as recommended - or once you have made a few, adjust to suit your taste.
