Tropical Sun - Jamaican Roast Chicken
A classic dish with a hint of the Caribbean, this traditional roast chicken recipe has its own special twist.

Ingredients
- 1 medium sized whole chicken
- 1 garlic bulb, broken into cloves
- 1 small onion, peeled and halved
- 1 lemon, cut into 4 wedges
- 1 small bunch of fresh thyme
- 45ml olive oil
- 2-3 tsp Tropical Sun Cock Flavoured Seasoning
Procedure
- Preheat the oven to 200°C. Place the garlic cloves in the roasting pan and drizzle with 15ml olive oil.
- Place the chicken on top of the garlic cloves in the middle of the roasting pan.
- Push the onion, lemon and thyme inside of the chicken's cavity.
- Drizzle the olive oil over the chicken and thoroughly rub on the Tropical Sun Cock Flavoured Seasoning.
- Put the chicken in the oven and roast for about 1 hour and 20 minutes.
- If you would like to roast any vegetables or potatoes, put them in the oven for the last hour of cooking.
- After 40 minutes, baste the chicken with juices in the roasting tin to keep the chicken moist.
- When cooked, take the roasting pan out of the oven and transfer the chicken to a serving dish.
- Let the chicken rest for 10 minutes before serving.
- Serve the chicken with some Tropical Sun American Pre-Fluffed Easy Cook Rice, some roast vegetables and enjoy!
