Tropical Sun - Jamaican Roast Chicken

A classic dish with a hint of the Caribbean, this traditional roast chicken recipe has its own special twist.

Serves: 4

Ingredients

  • 1 medium sized whole chicken
  • 1 garlic bulb, broken into cloves
  • 1 small onion, peeled and halved
  • 1 lemon, cut into 4 wedges
  • 1 small bunch of fresh thyme
  • 45ml olive oil
  • 2-3 tsp Tropical Sun Cock Flavoured Seasoning

Procedure

  • Preheat the oven to 200°C. Place the garlic cloves in the roasting pan and drizzle with 15ml olive oil.
  • Place the chicken on top of the garlic cloves in the middle of the roasting pan.
  • Push the onion, lemon and thyme inside of the chicken's cavity.
  • Drizzle the olive oil over the chicken and thoroughly rub on the Tropical Sun Cock Flavoured Seasoning.
  • Put the chicken in the oven and roast for about 1 hour and 20 minutes.
  • If you would like to roast any vegetables or potatoes, put them in the oven for the last hour of cooking.
  • After 40 minutes, baste the chicken with juices in the roasting tin to keep the chicken moist.
  • When cooked, take the roasting pan out of the oven and transfer the chicken to a serving dish.
  • Let the chicken rest for 10 minutes before serving.
  • Serve the chicken with some Tropical Sun American Pre-Fluffed Easy Cook Rice, some roast vegetables and enjoy!
