St David's Day Welsh Cakes
To celebrate St David's Day on the 1st March we have found a simple recipe for Welsh cakes.
Try it at home and treat the family to these delicious little pancake type cakes during your day.
Makes approx 20
Ingredients
- 225 g self-raising flour
- 110 g butter or margarine
- 75 g caster sugar
- 75 g mixed fruit or just sultanas
- 1 small egg
- ½ teaspoon mixed spice
Procedure
- Sift all of the dry ingredients together.
- Next rub in the butter or margarine (in a similar way to making pastry)
- When the mixture becomes crumbly add the fruit and mix thoroughly.
- Beat the egg lightly and add to the mixture.
- Mix to a dough and add a spot of milk if the mixture is a little too dry.
- Transfer the dough on to a lightly floured work surface and roll it out to about 5 mm thick.
- Using a 7cm plain cutter - cut the dough into rounds.
- Re-roll the trimmings and repeat until all the dough is used.
- Lightly grease a griddle with lard (a thick heavy pan could be used instead).
- Heat the pan over a medium heat and cook the Welsh cakes for about 3 minutes each side. (If they look as if they're browning too quickly, turn the heat down - it's important to cook them through but they should be fairly brown and crisp on the outside.
- Serve them warm, with lots of butter and home-made jam or perhaps some Welsh honey.
