Christmas Brussels Salad

Lettuce and salad leaves offer quick and easy ways to create meals for all occasions, from festive show stoppers and winter warmers, through to tasty ways to use up Christmas leftovers.
A bag of salad or a head of lettuce are ideal for creating meals from leftovers. Combine with Brussels sprouts and festive cranberry source in this low in saturated fat and low calorie salad, which is also high in vitamin C and A.

Serves 4
Ingredients
- 1 tbsp olive oil
- 500g cooked Brussels sprouts, sliced
- 50g walnut pieces
- 1 red eating apple, cored and sliced
- Juice 1 lemon
- 2 tbsp cranberry sauce
- 1 tbsp extra virgin olive oil
- 4 handfuls Watercress, Spinach & Rocket Salad
Method
- Heat the oil in a frying pan and fry the sprouts and walnuts for 1-2 minutes.
- Remove from the heat and toss in the apples.
- Whisk the lemon juice with the cranberry sauce and oil and toss into the salad with the sprout mixture.
Cooks tip:
Frozen sprouts cooked for 4-5 minutes can be used instead of leftovers. Other leftover nuts from Christmas can also be used.
