Apple Strudel
Another great use for 'The King of Cooking Apples.'
National Bramley Apple Week (UK) 6th - 13th February 2011
Ingredients
- 1½lbs Bramley apples
- ½ orange
- 100g/3½oz caster sugar
- Nutmeg
- 55g/2oz sultanas
- 6-8 sheets ready-made filo pastry
- 55g/2oz butter
- 2 tbsp dried breadcrumbs
Procedure
- Preheat the oven to 190C/375F/Gas 5.
- Peel, core and chop up your apples.
- Take the zest from your orange, squeeze out the juice and place in a large bowl with the apple, sugar, a pinch of nutmeg and sultanas, then mix well.
- Melt your butter (this can be done in a microwave in less than 30 seconds).
- Brush each sheet of filo pastry individually with the melted butter, then layer them on top of one another and place on a piece of greaseproof paper.
- Sprinkle the top sheet of filo pastry with your breadcrumbs.
- Down the middle of the sheet place your apple mixture being careful not to overfill.
- Roll up the filo pastry so that ends overlap. The greaseproof paper will help you achieve this.
- Place your finished Strudel onto your baking tray.
- For a brown shine finish by brushing on any remaining butter.
- Cook for 30-40 minutes or until golden brown (times may vary for fan assisted ovens).
- Serve with cream, ice-cream or custard.
