Tropical Sun - Pepperpot Soup

This Caribbean soup recipe is ideal for everyone, including vegetarians. A great starter to any meal or fabulous on its own.

Serves: 6-8

Ingredients

  • 800ml Tropical Sun Coconut Milk
  • 2 tbsp Tropical Sun Pepperpot Seasoning
  • 1 tsp Tropical Sun Dried Thyme
  • 1/2 tsp Tropical Sun Ground Pimento
  • 1 scotch bonnet pepper, stemmed and finely diced
  • 30ml vegetable oil
  • 2 medium onions, chopped
  • 1/4 tsp Tropical Sun Garlic Granules
  • 2 medium sweet potatoes. peeled
  • 540g Jamaica Sun Callaloo, washed and drained
  • 12 okras, diced
  • 2 spring onions, chopped
  • 1 litre water

Procedure

    In a large saucepan, heat the oil and simmer the onions.
  • Before the onions turn brown, add the garlic granules.
  • Cut the sweet potato into bite-sized pieces and add it into the saucepan.
  • Add the callaloo, okra and spring onions then cover with water and simmer for 5 minutes.
  • Add the coconut milk, pepperpot seasoning, thyme, ground pimento, and the scotch bonnet pepper.
  • Bring to the boil and reduce the heat. Simmer for 30 minutes or until the potatoes are soft.
  • Serve and enjoy.
