Tropical Sun - Pepperpot Soup
This Caribbean soup recipe is ideal for everyone, including vegetarians. A great starter to any meal or fabulous on its own.
Serves: 6-8
Ingredients
- 800ml Tropical Sun Coconut Milk
- 2 tbsp Tropical Sun Pepperpot Seasoning
- 1 tsp Tropical Sun Dried Thyme
- 1/2 tsp Tropical Sun Ground Pimento
- 1 scotch bonnet pepper, stemmed and finely diced
- 30ml vegetable oil
- 2 medium onions, chopped
- 1/4 tsp Tropical Sun Garlic Granules
- 2 medium sweet potatoes. peeled
- 540g Jamaica Sun Callaloo, washed and drained
- 12 okras, diced
- 2 spring onions, chopped
- 1 litre water
Procedure
- In a large saucepan, heat the oil and simmer the onions.
- Before the onions turn brown, add the garlic granules.
- Cut the sweet potato into bite-sized pieces and add it into the saucepan.
- Add the callaloo, okra and spring onions then cover with water and simmer for 5 minutes.
- Add the coconut milk, pepperpot seasoning, thyme, ground pimento, and the scotch bonnet pepper.
- Bring to the boil and reduce the heat. Simmer for 30 minutes or until the potatoes are soft.
- Serve and enjoy.
