Thai Spiced Chilli Cashews

Celebrate Thai New Year with a new recipe every day! Thai New Year (13th - 15th April) is the perfect excuse to try your hand at cooking up a Thai feast - and with some great recipes from Thai Taste, it couldn't be simpler.

Ingredients

  1. A generous tablespoon Thai Taste Red Curry Paste
  2. Splash of sunflower oil
  3. 1 birds eye chilli - de-seeded and very finely chopped
  4. Good pinch sea salt
  5. 100g cashew nuts

Method

  1. Preheat the oven to approx. 160c
  2. Mix the paste, oil, chilli and sea salt in a medium sized bowl to make a loose paste.
  3. Add the nuts and mix thoroughly with your hands to ensure that all the nuts are well coated.
  4. Turn out onto a flat baking tray and toast in the oven for about 10 minutes or until the nuts are golden, but being careful not to let them burn.
  5. Remove from the oven and allow to cool.
  6. Pour into a dish and serve.
