Tasty Tacos
If, like us, you get stuck with the same meals over and again through lack of time or imagination then hopefully this easy recipe will help you out.
Having never tried making tacos we cheated slightly and popped along to our local Waitrose for an Old El Paso Taco Kit - and added it to the great ingredients we already had, as an alternative choice for minced beef.
We buy exceptionally lean minced beef from our local Outwood Butchers and usually make a few Cottage Pies or Bolognese for the week. But tonight we fancied a change, something quick, easy and different.
We hope you enjoy this simple recipe and if anyone has a good taco recipe, please email us at info@kokovamagazine.com so that we can share it too.
Ingredients
- One Old El Paso Stand 'n' Stuff Tacos kit
- 500g minced beef
- 100ml water
- shredded lettuce
- chopped tomatoes
- grated cheese
Procedure
- Pre heat oven to 180C Gas mark 4
- Add a drop of oil to a pan and heat. Pop in the mince and brown. Drain excess liquid (ours is liquid free).
- Add in the Old El Paso Spice Mix (as per instructions on box) with 100ml of water.
- Stir and simmer for ten minutes - reduce to a rich tasty filling.
- Place Old El Paso Taco Shells open end down on foil or a baking sheet and heat for 2-3 minutes.
- Take it all to the table and stuff the tacos together. We used the hot filling sauce, tomatoes, lettuce, cheese, red peppers and the Old El Paso Taco Salsa from the kit.
Pretty good for convenience food and done in no time. Perfect for a tired, but hungry, Monday night after a long weekend of sun.
