Shrove Tuesday Pancakes
This year Shrove Tuesday (Pancake Day) falls on the 21st February.
With so many different fillings available, we chose a classic pancake recipe to get your foundations for creation off to a good start.
Fill them with whatever takes your fancy and have some family fun.
Involve the whole family, invite round some friends and get flipping!
Ingredients
- 110g/4oz plain sifted flour
- 2 eggs
- pinch of salt
- 200ml/7fl oz milk diluted with 75ml/3fl oz water
- 50g/2oz butter
Procedure
- Put the flour and salt into a large mixing bowl.
- Make a well in the centre of the flour and break the eggs into it.
- Whisk the eggs and flour together well.
- Gradually add small quantities of the milk and water mixture while whisking.
- When all the liquid has been added whisk once more until the batter is smooth, with the consistency of thin cream.
- Melt the 50g/2oz of butter in a pan.
- Spoon 2 tbsp of the melted butter into batter mix and whisk it in.
- Pour the rest of the melted butter into a separate bowl and use it - on greaseproof paper - to lubricate the pan before you make each pancake.
- As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter.
- After approx. 30 seconds flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.
- Repeat the procedure until all the batter is used - and the kids stop coming back for more!
